Everyone needs a few quick go-to meals for those busy or lazy days. This Blueberry Buckle is one of the families favorites. It meets all the requirements. It’s fast. It’s easy. And most importantly, it’s yummy!
First you measure out 2 Cups of your favorite All Purpose Baking Mix. (not flour)
Measure out 1 Cup of Milk and 1 Teaspoon of Vanilla
Now measure out 3/4 Cup of Sugar. I use 1/2 Cup of Coconut Flour and 1/4 Cup of White Sugar
Mix all the ingredients together and pour into a greased 9×13 glass baking dish. Then top with 1 Cup of Fresh Blueberries.
Bake at 375 degrees for 25 minutes or until a toothpick comes out clean. Let cool for 5 minutes before cutting. Enjoy
Blueberry Buckle
1 Cup Milk
2 Cups your favorite All Purpose Baking Mix (not flour)
1 Teaspoon Vanilla
¾ Cup Sugar (I usually use ½ Cup Coconut Sugar and ¼ Cup White Sugar)
1 Cup Fresh Blueberries
Preheat oven to 375 degrees.
Combine the milk, baking mix, vanilla, and sugar in a large bowl.
Pour batter into a greased 9×13 baking dish.
Gently scatter the blueberries on top of the batter.
Bake for about 20 minutes or until a toothpick comes out clean.
