As gluten intolerance is on the rise, the need for tasty treats is also. I have several friends who have gluten intolerance and they are always asking for recipes that are safe for them or even friends of theirs who have intolerance to gluten. I have a tasty Peanut Butter Cookie that really hits the spot.
First mix 2 Cups of Peanut Butter, 2 Eggs, 2 Cups of Sugar (you can mix this sugar up with brown sugar and or coconut sugar, just as long as it equals 2 cups)and, 2 Teaspoons Baking Soda. Just throw it all in the mixer and let it mix up.
The dough is very crumbly. You can use your hands to roll the dough into balls and place on a parchment lined cookie sheet. Or you could use one of these handy scoops to cut down on the time it take to roll the cookies.
Once you have your cookie dough on the parchment lined cookie sheets, throw them in the oven at 350 degrees for about 8-10 minutes. These cookies do not spread very much, so you can really place them pretty close.
When the cookies are done baking, remove the cookies and place on a piece of wax paper to allow the cookies to cool completely.
When I store the cookies, I always place some marshmallows in the container. The marshmallows allow the cookies to stay moist and the cookies won’t dry out.
These cookies are just wonderful. They are perfect with a bowl of chocolate ice cream.
Gluten Free Peanut Butter Cookies
2 Cups Peanut Butter
2 Cups Sugar
2 Eggs
2 Teaspoons Baking Soda
Mix together all the ingredients in a stand mixer.
Use a spoon to scoop the dough and roll into 1 inch balls. The dough is flaky and will have to be squeezed together to make it stick into a ball – it’s ok – it’ll be worth it.
Bake at 350 for 8-10 minutes.
