Instructions
  1. First start by chopping all the nuts up. They just need a rough chop. Then mix together the chopped nuts, coconut flakes, flax meal, and sugar.
  2. Melt the coconut oil and mix it into the nut mixture. Then fold in the egg white that has been beat until frothy.
  3. Now start adding the orange essential oils to the nut mixture. I go by smell and add the drops until I thought it had enough orange smell to trick my taste buds into thinking they were eating oranges.
  4. Take a parchment lined baking sheet and spread the raw granola out as evenly as possible. Bake for about 40 minutes at 300 degrees until the nuts are toasted. Be sure to watch your oven. Every oven is different and the nuts will need to be monitored. Once they are toasted, remove from the oven and allow the granola to cool completely.
  5. Take the chocolate and give it a rough chop, while the granola is cooling.
  6. Mix the chocolate into the cooled granola and enjoy.

This recipe was pretty fast to make and full of wonderful flavor. With a low carb/high fat diet, fruit is very limited. I will be honest, I miss Oranges!!!! So I had to come up with a plan to satisfy the taste buds. And I have done just that. So If you are looking for a way to get great fats in your diet with also a little bit of sweetness, look no further. Here is how I made the Orange Chocolate Granola.

Let me just take a moment to share my new favorite brand of chocolate. This has been a life saver with this way of eating. It isn’t something I enjoy every day. But for a special treat, this chocolate is WONDERFUL! My favorite is the Creamy Milk Chocolate. I chose the blood orange flavor to enhance the orange flavor through out the granola. Take the chocolate and give it a rough chop, while the granola is cooling.

Mix the chocolate into the cooled granola and enjoy. I keep it in portioned out zip lock baggies. It makes for an easy grab and go treat.
