Zucchini Pizza Casserole

Summer time brings lots of tasty veggies from the garden. If you are anything like us, you probably have zucchini coming out of your ears! You can only make so much fried zucchini and zucchini bread before you are BEGGING for a new idea to use up all that zucchini. This was a family favorite that I grew up with. My mom is the mastermind behind this tasty dish. I have altered it a bit to better suit my cooking styles.

I start with a pound of ground sausage. I usually use the original or mild flavored sausage. But if you enjoy a little more kick, you may want to try the hot or spicy flavor.

After the sausage is browned, I remove it from the frying pan. I then take 2 tablespoons of olive oil and 2 cups of chopped onions and saute the onions until they become tender and translucent.

I then combine 2 cups of chopped peppers, 4 cups of chopped tomatoes, 1 can of pizza sauce, 4 palms of Italian Seasoning, the sauteed onions and the browned sausage and combine it all into a large stock pot. I cover this mixture and bring it to a simmer and cook for about 30 minutes or until the peppers and tomatoes are tender and cooked. Stir it occasionally.

In the saute pan add 2 tablespoons of olive oil and the 10 cups of zucchini. Cover the pan and cook the zucchini on a low heat. Stir occasionally.

When the zucchini is tender and cooked through, drain it. Zucchini contains a bunch of liquid. I drain the liquid off because we are making a casserole not soup!

Mix the zucchini with the veggie and sausage mixture. I simmer for about 20 minutes longer. Just so all the ingredients can get to know each other and take on the flavors of each other.

Bowl it up and top with some mozzarella cheese. It will take a few minutes for it to melt on top but it is totally worth the wait. This dish is full of flavor and a great way to use up all those veggies that you have been blessed with!

 


Zucchini Pizza Casserole

1 Pound Sausage

2 Cups Chopped Onion

2 Cups Chopped Peppers

4 Cups Chopped Tomatoes

10 Cups Chopped Zucchini

4 Palms of Italian Seasoning

1 Can of Pizza Sauce

4 Tablespoons Olive Oil, Divided

Mozzarella Cheese

 

1-Brown Sausage and remove from pan

2-Add 2 Tablespoons of olive oil and the onions to the saute pan. Cook the onions until the onions are tender and translucent.

3-Combine the peppers, tomatoes, onions, sausage, Italian Seasoning, and pizza sauce in a deep pan and simmer until the peppers and tomatoes are cooked.

4-Saute the zucchini in 2 tablespoons of olive oil. Cover and cook until tender. Drain and then add them to the veggie and sausage mixture. Cook for 20 minutes longer.

5-Dish up and top with Mozzarella cheese.
