Double Chocolate Muffins

Ingredient List

3/4 C Pumpkin Puree

1 C Honey

2 Eggs

3/4 C Plain Greek Yogurt

2 Tsp. Vanilla

1 1/4 C Flour

1/2 C Cocoa Powder

1/2 Tsp. Salt

1 Tsp. Baking Powder

1 Tsp. Baking Soda

1 C Mini Chocolate Chips

This was a request from a good friend of mine. She has a few really picky eaters in her household and she wanted something that was a healthy option. She knew that her kiddos would eat chocolate chip anything. So I came up with this recipe to help her out. They are Stoney approved! He is my picky eater. I hope you enjoy this recipe!

I start with combining my dry ingredients. 1 1/4 C Flour (you can use Gluten Free Flour here if you want to make them that way!), Cocoa Powder (a good quality if best), Baking Soda, Baking Powder and Salt. I just use a whisk to incorporate the ingredients together.

In my stand mixer I combine the wet ingredients. The 3/4 C Pumpkin Puree (you can buy canned pumpkin or you can make it from scratch. I always make a huge batch of pumpkins and then freeze them in 2 C portions), Honey, Eggs, Yogurt, and Vanilla. Mix it really well in the stand mixer with the paddle attachment. You can use a whisk and spoon for this step if you don’t own a stand mixer or a hand held mixer.

Then I mix the dry ingredients into the wet ingredients. Then fold in the mini chocolate chips.

Let me tell ya about this product! I buy it at Trader Joes and it is my absolute favorite non stick cooking spray! It has a great flavor and it doesn’t leave a nasty film all over everything. When making these muffins you don’t want to use paper muffin liners. The batter sticks to them. I strongly suggest that you use a non stick spray instead. Try this one if you have a Trader Joes by you!

After spraying the muffin tin, I use an ice cream scoop and fill the holes. I bake the muffins for 20 minutes at 350 degrees or until the muffins are completely baked.

Allow the muffins to cool in the pan for 10 minutes and then you can remove them to a finish cooling on a cooling rack if you prefer! These muffins are soft and wonderful! Full of flavor and only use Honey for the sweetener. A great way to start the day or a nice pick me up snack in the afternoon!
