Ingredient List
Scones-
1/3 C Sugar
Zest of 2 Oranges
2 C Flour
1 Tsp. Baking Powder
1/4 Tsp. Baking Soda
1/4 Tsp. Salt
1/2 C Frozen Butter
1/2 C Sour Cream
1 Lg. Egg
Glaze-
Juice of both Oranges
3 Tb. Butter, melted
2 C Powdered Sugar (or more)
1/2 Tsp. Vanilla
These scones will not disappoint! They are light and fluffy with the fresh sweet taste of oranges. Yes, scones can take some time and effort to make. But I think they are well worth the effort. This recipe is perfect for a morning brunch or to enjoy with afternoon tea!
I first take the zest of the 2 oranges and mix it with the sugar. I set the mixture aside so the sugar can get fully infused with the orange. I think this step is necessary to fully utilize the orange flavor!
In another bowl mix the flour, baking powder, baking soda and salt. Set aside.
In another bowl mix the sour cream and the egg. Set aside. Lots of bowls and lots of steps. Hang with me….it will be SO WORTH IT!
In your bowl with the flour mixture, grate the frozen butter. Freezing the butter really helps the process of mixing into the flour. You will want to use your hands and get the consistency to a corn meal texture.
Now dump your orange zest and sugar mixture into the flour/butter mixture. Still using your hands, combine these two mixtures.
Now it is time to add the egg/sour cream to the mix. I STILL use my hands. They are really the best tool for this job.
Now take your dough and form it into a circle. You want it to be about 1 inch tall. The dough will form nicely. It will be sticky at first but will come together. I Promise!
Now cut the dough into 8 pieces like a pizza. You will want to bake the scones on either a silicone mat or parchment paper.
Separate the scones on the baking sheet. Bake in a 400 degree oven for 20-25 minutes or until the scones are lightly toasted.
While the scones are baking, take this time to make the glaze. This is where some personal judgement will come into play. I used more powdered sugar because my oranges were REALLY JUICY! You can adjust the thickness of the glaze by adding powdered sugar. The thicker you want it…the more sugar you will use.
When the scones come out of the oven, spoon the desired amount of glaze over the top of the scones. Allow them to cool before you enjoy!
