Ingredient List
1/2 Onion, Chopped
1 C Chicken Broth
1/4 C Flour
1 C Milk
2 Tb. Butter
1 Tsp. Parsley
1/2 Tsp. Salt
1/4 Tsp. Pepper
Heft Pinch of Dried Loveage (optional)
There have been so many times I have needed a can of Cream of Chicken Soup and I never have it. So one day, I thought to myself, I am just going to make it. It can’t be THAT hard. Right? And it really wasn’t. Plus there are so many benefits to making it yourself. You can control the salt contents. You know for a fact what is in it. And the flavor, the flavor is SOOOO much better than bought/canned cream of chicken soup. Here is how I make it.
I start with 2 tablespoons of butter and about a half an onion roughly chopped. I don’t worry to much about how these onions are chopped because I will be using my emulsion blender to smooth the texture out. I saute the onions in the butter until the onion are tender and translucent.
Then I add my chicken broth, parsley, salt, pepper, and loveage. Bring the mixture to a boil. While this is coming to a boil, mix together the 1 cup of milk with the 1/4 cup of flour.
I start by whisking the milk mixture in to the broth mixture. Then I bust out my emulsion blender and smooth the texture out. Basically I am really mincing up the onions for the weirdos in my family who don’t enjoy the texture of onions but like the flavor. If you don’t have this issue, you can just chop the onions more finely when you originally chop the onions. You will want to whisk the soup mixture and cook over low heat until it is thick and bubbly.
Just cook the soup until it is at the mixture you really want. I usually cook a little bit longer than a soup texture because I cook with the soup more than we just eat the soup. If you wanted to add chicken to the soup, now is when I would add the chopped cooked chicken. But since I use this recipe for cooking, I leave out the chicken. It makes about 2 cups of soup. When I cook with the soup, I substitute 1 cup of this soup for 1 can of bought soup. I hope you enjoy this recipe. Our family really has!
