Depression Cake or Egg and Dairy Free Cake

Ingredient List

1 1/2 C Flour

3 Tb. Cocoa

1 C Sugar

1 Tsp. Baking Soda

1/2 Tsp. Salt

1 Tsp. White Vinegar

1 Tsp. Vanilla

5 Tb. Vegetable Oil

1 C Water

This cake has many times. Wacky Cake, Dairy- Free Cake, Egg-less Cake and Depression Cake. I personally like the title of Depression Cake. So many meanings can be because of this title. It could be called Depression cake because it can cure any sadness. Well maybe not every depression. It can be called Depression Cake because it was popular during the depression because it didn’t require expensive ingredients like eggs and milk. Or, and my personal favorite, it could be called Depression cake because it has 3 holes or depressions in the cake when you are preparing the cake. Either way one thing is for sure. The cake is rich and fluffy and fantastic. Here is how I made it.

First you start with a 8×8 inch baking pan. I, actually, don’t own a square baking dish so I used a circle baking dish. Do not grease the pan. Just place the flour, baking soda, cocoa, sugar, and salt in the dish.

With a whisk, mix all the ingredients really well.

Then make 3 depressions or holes in your dry ingredients. 1 large and 2 small holes. Put vanilla in one small hole, vinegar in the second small hole, and the vegetable oil in the large hole.

Then pour the water over the top of the holes and dry ingredients.

Mix all the ingredients really well and then scrape down the sides of the bowl. Place in a 350 degree oven for 35-40 minutes or until the cake passes the” tooth pick” test.

Allow the cake to cool for about 10 minutes and then you can serve. You can enjoy this cake plain which will make the cake egg and milk free. Or you can give it some toppings such as fresh fruit or a glaze.


Glaze Ingredients

THE GLAZE CONTAINS DAIRY!!!! You can substitute the milk for a milk alternative or even just water.

I just took 1 cup of Powdered Sugar, 1 Tablespoon of Vanilla, and 2 Tablespoons of Milk and mixed everything together.

This cake is really flavorful so I chose not to give it a heavy icing and just used a simple glaze.
