Ingredient List
1 Stick of Butter
1 C Semi Sweet Chips, divided
1 1/2 oz. Unsweetened Chocolate
2 Eggs
1 1/2 Tsp. Vanilla
1/2 C Sugar
1/4 C plus 1 Tablespoon Flour
1 Tsp. Baking POWDER
1/2 Tsp. Salt
To go with my 7 days of Cast Iron Cooking, I decided to make a brownie. There is nothing more warming to my soul than a good cup of coffee and a nice warm brownie. Here is how I made the Brownie in the Cast Iron Skillet!
I started with melting the butter, 1/2 cup of chocolate chips, and the unsweetened chocolate on the stove top. After it is melted and smooth, allow to cool for about 15 minutes.
In a separate bowl, I mixed together the eggs, vanilla, and sugar.
In a different bowl, I combined the dry ingredients. Sift together the flour, baking powder and salt.
Now that the chocolate mixture is cooled, mix it into the egg and sugar mixture until well combined.
Now mix the dry ingredients into the wet ingredients. Fold in the other 1/2 cup of chocolate chips into the batter. REMEMBER, these are brownies. You do NOT want to over mix. You just want them to get combined but not beaten to death!
Next pour the batter into a WELL GREASED cast iron skillet. Place in a 325 degree oven for 25-30 minutes, or until the brownies are cooked all the way through. Remember that cast iron will continue to cook a little while after being removed from the heat because it retains its temperature very well.
When the brownies are cooked and cooled, cut them up and enjoy! Try using some mint chips instead of the second half of chocolate chips or some toffee chips. Brownies can be made many different ways, so have fun with the flavors!
