Ingredient List
1-2 lb. Pork Loin
1 1/2C Water, divided
3 Carrots
1 Onion
4 Potatoes
1 Tb. Lovage (or 2 stalks celery)
3 Cloves Garlic
Salt and Pepper
2 Tb. Oil
If you haven’t read the Pressure Cooker Post, now would be a good time to read that. Pressure Cookers are not to be used lightly or without some education.
This pork loin recipe is fast and tender. It has amazing flavor and it didn’t take all day to make, even though it taste like it has. That is a definite perk to the pressure cooker. Ok, so lets get started!
First we are going to take the pork loin and poke 3 holes in it. We will take our crushed garlic cloves and shove them in the holes. We will then take the oil and heat it in the bottom of the pressure cooker. We are going to brown the loin on all sides. Add 1 cup of water to the pressure cooker.
We will bring the pressure cooker up to HIGH pressure and cook the loin for 20 minutes.
Turn off the heat! Using the “Quick Release” feature on the pressure cooker, release the heat to no pressure. ALWAYS OPEN THE PRESSURE COOKER AWAY FROM YOUR FACE!
Remove the pork loin and add the chopped veggies and seasoning to the bottom of the pressure cooker. Add the last 1/2 of cup water to the pressure cooker. Now place the pork loin on top of the veggies and place the lid back on top.
Bring the pressure cooker back up to high pressure and cook for another 5 minutes. Turn off the heat and allow the pressure to release naturally.
Once the pressure cooker has no pressure, open the lid away from your face, and rest the pork for 5 minutes before cutting into it.
