Ingredient List
2 lb. Roast
2 Tb. Olive Oil
1/2 Tsp. Onion Powder
1/2 Tsp. Salt
1/4 Tsp. Pepper
3 C Beef Broth, divided
1 1/2 Tb. Worcestershire Sauce
1 Onion, quartered
4 Potatoes, chopped
4 Carrots, chopped
If you are constantly struggling to have a nice dinner but you work full time and between kids and work it just never gets done? Well look no further. This meal takes a total of 1 hour to make. Serve with some 60 minute rolls, and you have a good meal for your family. The plus side is you can have this all prepped and and waiting also! Here is how I make my Pressure Cooked Beef and Veggies!
First start by heating the oil in the pressure cooker. Brown the roast on both sides.
Season the roast with the Salt, Pepper and Onion Powder. Pour 2 cups of beef broth and the Worcestershire sauce over the top and put the onion quarters on top of the roast.
Seal the lid and bring to a HIGH pressure for 30 minutes.
Use the quick release and remove from the heat. OPEN THE LID AWAY FROM YOUR FACE!!! Remove the roast and place the carrots and potatoes on the bottom of the cooker. Add the last cup of beef broth.
Place the roast on top and seal up the cooker.
Bring to HIGH PRESSURE again for 10 minutes. Turn off the heat and allow the cooker to cool down naturally.
Serve up the roast and veggies and enjoy!
NOTE- Once the pressure is to HIGH, you can turn down the heat some. This will help not burn the food in the pressure cooker. This is a tip I forgot to do myself. That is why there is a little spot on the roast that got a littler more “browned” than I really wanted. It didn’t effect the taste though!
