Ingredient List
4 Leg Quarters, Bone in, Skin on
1 Tb. Olive Oil
1 1/2 C Chicken Stock
1 Tsp Thyme
1 Tsp. Paprika
1/4 Tsp Black Pepper
2 Tb. Lemon Juice
1/2 Tsp. Salt
6 Cloves Garlic, minced
Here is another fast and easy recipe for those busy days when you just don’t have time to slave in the kitchen. This recipe is tender, juicy, and flavorful! Plus it is done in about 30 minutes. Let’s get started!
I first heat the olive oil in the pressure cooker. Brown the chicken, slightly, on both sides.
Now it is time to load the pressure cooker. Place the chicken in the pot to where it doesn’t over fill the pressure cooker. Mine fit 4 leg quarters perfectly. Then add the chicken stock and lemon juice. Now take the herbs, spices, and garlic and pour it over the top of the chicken. I tried to make sure every piece of chicken had some of the flavor!
Cover the pressure cooker and turn the heat on high. Once the cooker reaches high pressure, set your timer to 25 minutes. I turn down the heat so the cooker still has the high pressure temperature but doesn’t have TOO much heat! Once the cooker has ran for 25 minutes. Turn off the heat and allow the pressure cooker to lower pressure naturally for 15 minutes. Remove from heat and release the pressure the rest of the way so you can open the cooker. ALWAYS OPEN AWAY FROM YOUR FACE! You don’t want to burn yourself!
I start cooking my sides as soon as I turn off the cooker. You will have to wait 15 minutes before you can serve the chicken anyway….i use this time to cook the sides!
