6-8 Boneless Chicken Thighs, with skin
2 Cloves Garlic, minsed
2 Tb. Honey
1 Tb Soy Sauce
Half a Lime, Zested
Juice From 1 Lime
Pinch of Pepper
I am always looking for new and interesting ways to cook chicken. My family prefers dark meat so I chose to go with chicken thighs. If you would rather white meat, by all means, use chicken breast. I do suggest keeping the skin because it adds a lot of flavor to the meat and also helps the meat not to get too dry. Here is how I made the Honey Lime Chicken.
I start by making the marinade. Combine the cloves, honey, soy sauce, lime zest and juice, and pepper. Give it a good mix.
Then I dredge the chicken thighs in the sauce and place it in a foil lined casserole dish. Then pour the rest of the marinade over the top of the thighs. Let marinade for 2 hours.
Cover with aluminum foil and bake at 400 degrees for 20 minutes or until the thighs our cooked properly. The cook time will depend on the thickness of the chicken.
Once the chicken is cooked all the way, remove the foil and place the oven on Broil. Broil for 1 minute to crisp up the skin a bit.
Allow the chicken to rest for 5 minutes, then serve!
