Zucchini Bread

Ingredient List

3 C Flour

1/2 Tsp. Salt

1 Tsp. Baking Soda

1Tsp. Baking Powder

3 Tsp. Cinnamon

3 Eggs

1 C Coconut Oil, melted

2 C Sugar

1/4 C Brown Sugar

2 Tsp. Vanilla

2 C Zucchini, shredded

3/4 C Walnuts (optional)

3/4 C Chocolate Chips (optional)

Another one of my summer time favorites is Zucchini Bread. It reminds me of my mom and grandmas kitchens. Fresh, warm, sweet zucchini bread from from the oven. Ahhh… Now I can pass that smell and love of zucchini down to my children. Here is how I made the Zucchini Bread!

I first prepared the baking pans. I spray them with coconut oil spray. You can use whichever baking spray you prefer.

Then I combine the eggs, coconut oil, sugars and vanilla in a mixing bowl and mix them really well.

In a separate bowl, I combine the flour, salt, baking soda, baking powder, and cinnamon.

Mix the wet ingredients and dry ingredients together. Do not over mix. That will make for a really dense bread. And fruit breads are already pretty dense. Then add the zucchini into the batter. If you want to add the chocolate chips or nuts into the batter.

Now, seperate the batter into the baking pans. I did one bread pan with regular batter with no nuts or chips. I then added chips to the batter and then separated the batter into the last two pans.

Bake the bread at 325 degrees for 45-64 minutes (depending on how accurate your oven is). You will know the bread is baked all the way by placing a knife of tooth pick in the middle of the bread and comes out clean. Allow the bread to cool completely and wrap in plastic wrap or zipper bags. You can also freeze this bread for you to enjoy at a later time.
