Double Chocolate Chip Cookies

Ingredient List

10 Tb. Butter

3/4 C Brown Sugar

1/4 C Coconut Sugar

1 Lg Egg (or 2 small eggs)

1 1/2 Tsp. Vanilla

1 C Flour

2/3 C Cocoa Powder

1/2 Tsp. Baking Soda

1/4 Tsp. Salt

1 1/4 C Chocolate Chips

Stoney is a cookie monster. But to be honest, I hate making the same cookies every week. So to keep things interesting I decided to change it up this week and make these Double Chocolate Chip Cookies. Here is how I made them.

First I take the dry ingredients and combine them in a mixing bowl. Just whisk together the flour, cocoa, baking soda, and salt.

Then in my stand mixer I combine the butter, brown sugar, coconut sugar, egg, and vanilla.

Next I add the dry ingredients into the wet ingredients and mix until everything is combined. Then mix int he chocolate chips.

Next you will scoop the cookies out onto either parchment paper or a silicone lined baking sheet. Cover with plastic wrap and refrigerate for 2 hours up to 48 hours. (After the cookies have hardened, you can freeze them in a plastic bag at this state instead of baking)

Next you bake the cookies at 350 degrees for 10-12 minutes until the cookies are baked. I like mine a bit under cooked and they finish cooking on the baking sheet as they cool. Remove the cookies from the baking sheet onto either a cooling rack or a towel with wax paper on top. Enjoy!
