6 Strips of Bacon
1/2 Medium Onion
2 Lb. Ground Beef
1/2 C Bread Crumbs
2 Tb. Parsley
1 Egg
1 Tsp. Chili Powder
1 Tsp Garlic Powder
1 Tsp. Salt
1 TB Coconut Oil
1 1/2 C BBQ Sauce
4 Tb. Wild Turkey with Honey
This is one of those recipes we have every now and then. It packs a punch with flavor and is a perfect dish for when you are stuck in a rut with the same ol’ meals every week. This dish goes great with rice or noodles or potatoes. Here is how I make my meatballs.
I first chunk the uncooked bacon and the onion and place them into the food processor. I want these to be a paste. Finely chopped and combined. Then I add the bread crumbs to the food processor as well.
In a big bowl combine the bacon/onion mix with the beef, garlic powder, egg, chili and salt.
Form the mixture into 2 inch balls.
Heat the coconut oil in a skillet and over medium low heat start cooking the meatballs for about 10 minutes or until they are ALMOST cooked.
Remove the meatballs and then in the SAME SKILLET add the BBQ sauce and the Wild Turkey with Honey. If there is a lot of grease left over, you can remove most of it if you prefer. Warm the sauce and then add the meatballs back into the sauce and cook for 10 more minutes over low heat.
Allow the meatballs to rest in the sauce for about 5 minutes and serve!
