Lemon Blueberry Muffins

Ingredient List

3 C Flour

1 1/2 Tsp. Baking Powder

3/4 Tsp. Baking Soda

1/2 Tsp. Salt

3 Tb. Lemon Zest

3/4 Tb. Melted Butter

3 Eggs

3 Tsp. Vanilla

3/4 C Honey

3/4 C Greek Yogurt

6 Tb. Lemon Juice

6 Tb. Milk

1 1/2 C Blueberries

I like coming up with new recipes that will be healthy and use honey for the sugar instead of regular white sugar. Honey is a great substitute. These muffins are the healthy start to a perfect day!

I mix together my flour, baking powder, baking soda, and salt. Set aside.

I then combine the lemon zest and the lemon juice in a different bowl and set them aside. I used 2 lemons.

In your stand mixing bowl combine the lemon zest, melted butter, eggs, vanilla, honey, Greek yogurt, lemon juice and milk. Mix it up really well.

Once you add the flour mixture to the mix and it is combined really well with the wet ingredients, fold in the blueberries.

Spray your muffin tin or use papers and fill the cups with the batter. I use an ice cream scoop for this step. It gives me (mostly) uniform muffins.

Bake the muffins at 350 degrees for about 20-22 minutes or until they are golden on top and cooked all the way through. I cool my muffins in the tin. One of the perks of using the papers.

The muffins are ready to enjoy!
