Ingredient List
3/4 C Liquid Coconut Oil
3/4 C Brown Sugar
1/4 C Coconut Sugar
2 Eggs
1 Tsp. Vanilla
2 C Flour
1 Pk. (3.4 oz.) Instant Vanilla Pudding
1 Tsp. Baking Soda
Pinch of Salt
1 C Semi Sweet Chips
1 C White Chocolate Chips
These cookies kind of turned into a fun experiment for Stoney and I. We both love cookies. But he wanted plain Chocolate Chip Cookies and I wanted something a little but different. So we came up with this recipe and it was a lot of fun too! Here is how you make, what we call, Marbled Cookies.
We started by combining the dry ingredients. We mixed the flour, pudding, baking soda, and salt. Set this aside.
I then took the melted coconut oil, the sugars, the eggs and the vanilla and mixed them in the mixer. (the coconut should be a bit on the warmer side)
Then combine the wet ingredients with the dry ingredients.
Now mix in the chips. Because the mixture will be a little warm, the chips will melt a bit.
Next take a baking dish and spray with coconut oil (or whatever spray you prefer or even use butter)
Use your large cookie scoop and scoop out the dough and place it on the dish. Place the dish in the fridge for 4 hours, minimum. You do NOT want to bake these cookies until the dough is cold! So DO NOT skip out on this part!
So then after the dough is cold and set, then place the dough balls onto a silicon baking mat and bake at 350 degrees for 8-10 minutes or until the cookies are cooked.
I allow the cookies to cool on the cookie sheet for 5 minutes before I remove them to cool on the wax paper. These cookies are just fantastic. Sweet, coconut flavor!
