Carbonara

Ingredient List

8 Slices of Bacon, cooked and crumbled

1/2 C Cream

1 Tb. Parsley

1/2 C Parmesan Cheese

2 Tsp. Olive Oil or Bacon Grease

1 Lb. Pasta of your choice, cooked

1/2 C Pasta Water

1/2 Tsp. Salt

2 Eggs

Carbonara has got to be my favorite way to eat pasta. The sauce is amazing! Rich and Creamy!!!! This dish goes together pretty fast and never disappoints. Here is how I made it!

I start by cooking my bacon. I prefer to chop the bacon before I cook it. Drain on a paper towel and set aside.

To make a cream start with a bowl. Mix together the cream, parsley, Parmesan Cheese, Bacon Grease or Olive Oil, and 2 eggs. Mix it well and set aside.

Cook and drain your noodles. Reserve that 1/2 cup of starch water before you strain the noodles.

Place the noodles and the cheese mixture back into the pan that you cooked your noodles in. You will want to turn the heat on a medium-low. You will want to stir constantly so the pasta doesn’t stick to the pot. If you sauce isn’t to the consistency that you prefer, you can add the starch water. I always add a bit and then stir. If I need more, then I add a bit more. You may or may NOT use all of the water. Depends on the type of pasta you are using. Cook for about 3-4 minutes to allow the egg to cook all the way.

Fold in the bacon and remove the pasta from the heat.

It is time to serve this dish up and enjoy!
