Bacon and Cauliflower Gratin

Ingredient List

10 Slices Bacon, chopped and cooked

6 C Cauliflower, chopped

4 Tb Butter

4 Tb Flour

3 C Milk

2 C Cheddar Cheese

1 Pinch Nutmeg

Salt and Pepper

Fried Onions, optional

This dish was a bit of an experiment that has turned into a wonderful side dish. It has bacon and it has cheese and it has cauliflower. What more can a side dish need? Here is how I made this yummy side dish.

I started with the bacon. I chopped and cooked the bacon then I set it aside to drain on some paper towels.

I then boiled the cauliflower in some salt water for about 3 minutes. Then I drained it and set it aside.

I then worked on the roux. Melt the butter in a pan and then add the flour. You will want to cook the flour taste out of the flour make the color change to a nice nutty color.

Then stir in the milk and cook the mixture until everything is thick and bubbly.

Now it is time to mix in the cheese. You will want the heat to be at a low. You don’t want to burn the mixture.

Now that the mixture is thick and bubbly, stir in the bacon crumbles.

Now fold in the cauliflower.

Place the whole mixture into a 9 by 13 inch casserole dish.

You can add the fried onions on top if you would like a toasted crunch on top. Place the dish in a 375 degree oven for 30 minutes.

Take out of the oven when everything is toasted and cooked and let it sit for about 5 minutes. Serve it up and enjoy!
