Bacon Cookies

Ingredient List

1 lb. Bacon, chopped and cooked

3 C Flour

1 Tsp. Baking Soda

1 Tsp. Corn starch

3/4 C Butter, softened

1/2 C Maple Syrup

1 C Brown Sugar

1 Tsp. Butter Rum Flavoring

2 Eggs

2 C Chocolate Chips

HOLY COW THESE COOKIES ARE FANTASTIC! I actually worked really hard on this recipe. I wanted the fluffiness to crispy ratio to be just right. And I believe I have done it! And what better way to start the Bacon Series than with a Bacon Cookie!?! Here is how I made them.

I first take the eggs, brown sugar, maple syrup, and the butter rum flavoring and mix them all together.

I then added the butter and really whipped the ingredients together.

While the wet ingredients are getting well incorporated, i whisk the flour, baking soda, and corn starch together.

Also be sure your bacon is cooked. You don’t want it to be too crispy because it will be cooking in the oven with the cookies as well.

Now that the wet ingredients are combined, add the dry ingredients into the mixer. Slowly and a little bit at a time. Then add your chocolate chips to the dough. I prefer a dark chocolate or semi sweet in this cookie.

Now take your silicone lined baking sheet and place your cookie dough on it. Then take your bacon pieces on top of the cookies.

I used a scoop to form the dough and then I pushed the bacon pieces down on top of the cookie. I flattened the cookie out a bit during this process. Bake the cookies at 350 degrees for about 10 minutes or until the dough is lightly toasted and cookies are cooked.

Allow the cookies to cool on the baking sheet and then cool on wax paper.
