Ingredient List
3-4 C Cooked Chopped Chicken
4 Tb. Butter
1 C Milk
1 1/2 C Flour
1 1/4 Tsp. Baking Powder
1/4 Tsp. Salt
2 C Chicken Broth
I am always looking for things to do with left over chicken. I usually roast a whole chicken in my crock pot. The family usually eats all the dark meat that night for dinner. But then I have all the left over meat to do something with. There are a whole SLEW of options. I decided to go with this Chicken and Dumplings recipe this time. This recipe is so simple to throw together plus there are a bunch of options! Here is how I made it for my picky family!
First take a 9 by 13 inch casserole dish and place the 4 tablespoons of butter in it. Then while the oven is preheating to 400 degrees, place the casserole dish in so the butter can melt.
While your butter is melting, mix your flour, baking powder, salt and milk together. This will make your dumpling mix.
Now that your butter is melted, spread your chopped chicken in the dish.
Then top with your dumpling mixture.
In the same bowl you used to make the dumplings, mix the cream of chicken soup and the chicken broth. pour over the dumplings and chicken. Place in the 400 degree oven for 35-40 minutes or until the dumplings are fully cooked.
The dumplings will be golden and crisp. This dish was perfect comfort food. Simple and fast and full of flavor.
Now- lets talk about options. My family isn’t huge on vegetables, so I am always making things to order. I personally LOVE veggies. So instead of adding my peas (and/or corn and carrots) to the casserole, I made them on the stove top and mixed them into my serving. I love sloppy food! So IF you wanted veggies in your casserole, I would add them in with the chicken layer.
