Unstuffed Cabbage Rolls

Ingredient List

1 1/2 -2 Pounds Ground Beef

1 Tb. Olive Oil (optional)

1 Onion, Chopped

1 Clove Garlic, minced

1 1/2 C Water

2 Tb. Tomato Paste

2 C Diced Tomatoes

1 C Fire Roasted Peppers

1 Tsp. Salt

1 Tsp. Pepper

2 Tb. Sugar (optional)

I really enjoy cabbage and stuffed cabbage rolls are just wonderful. But they are a lot of work that I don’t want to have to go through. So I make my UNstuffed Cabbage Rolls. This recipe has everything that makes Cabbage rolls yummy without all the fuss. Here is how I make this recipe.

I start by browning my meat and onions. If your beef doesn’t have enough fat, you can add olive oil to the meat.

Once the meat is mostly browned and the onions are starting to become tender, I add the garlic to caramelize and become tender.

In a large pot I add the chopped tomatoes, the water, salt and pepper and tomato paste. Then also add the meat mixture. Give it a good stir.

Toss the cabbage into the pot and stir it in and cover the pot and allow the cabbage to cook.

I give the pot a stir from time to time to allow the cabbage to get coated. I keep the heat to a medium low so the cabbage doesn’t get burned.

Once the cabbage is mostly cooked, I then add the roasted peppers and the sugar to the pot. The sugar isn’t a must but I found it to cut down on the acid of the dish.

Once the cabbage is tender you can enjoy the dish. I found it to be a big bowl of happiness that really hits the spot!
