3 C Cooked Chicken, Chopped
1 C Sour Cream
1/2 Sleeve Ritz Crackers
1/2 C Fried Onions
1/4 C Butter, Melted
So this is one of those recipes that will work great with left over turkey or chicken. We don’t each much turkey so when I made this recipe, I used chicken. This recipe was fast to throw together and great for a make a head dish and you can throw it in the oven when you get home from being gone all day. Here is how I made it.
I started buy shredding up some cooked chicken. I used about 3 cups worth. Place in an oven safe container.
Next, I mixed 1 cup of Sour Cream and 1 cup of Cream of Chicken Soup into the chicken. I would stop here and place in the fridge until you are ready to heat it and eat it.
In a zipper bag I crunched up 1/2 sleeve of Ritz cracker and then I mixed in the fried onions. (You can keep them in the zipper bag until you are ready to bake if you are making this dish for a later time) Then I topped the chicken mixture with the cracker mixture. Then I drizzled the melted butter over the top. Place it in a 350 degree oven and bake for 25-30 minutes until it is heated all the way through.
The mixture should be nice and bubbly and the topping will be toasted. I would serve this dish with some brussle sprouts or some steamed broccoli.
