1 C Butter
1 C Coconut Sugar
1 C Brown Sugar
1 C Peanut Butter
2 Large Eggs
2 Tsp. Vanilla
3 C Flour
2 Tsp. Baking Soda
1 Tsp. Salt
I LOVE LOVE LOVE Peanut Butter Cookies. What I don’t love about them is that they always dry and are a giant crumbly mess. Not this recipe! It is amazing. Here is how I made these soft and chewy cookies!
I first start with the Butter, Coconut Sugar, and Brown Sugar. Place them in a stand mixer and get them whipped together really well. Then you add the Vanilla, Eggs and Peanut Butter.
It will be a nice smooth wonderful texture when they are all mixed up together.
In a separate bowl you will want to mix together the Flour, Baking Soda and the Salt. After the dry ingredients are mixed, slowly add them to the wet ingredients. Mix the two well.
I use a silicone baking mat to bake the cookies on. I also used a medium scoop for the measurement of these cookies. No need to flatten the cookies before they bake. Place the cookies into a 350 degree oven and bake for 10-12 minutes.
When they are finished baking, tap the cookie sheet on the counter so the center of the cookie falls a bit. Allow the cookies to cool on a bath towel that has been folded and then lined with a sheet of wax paper.
Tip- If you have don’t have coconut sugar, you can use regular white sugar. I like to bake with coconut sugar because it registers lower on the glycemic index. You can also use “fake” brown sugar as well.
