Unstuffed Pepper Skillet

Ingredient List

1/2 Lb. Ground Beef

1/2 Lb. Sausage

2 Peppers, Chopped

1 Onion, Chopped

1 Large Clove of Garlic, Minced

1 Can Diced Tomatoes with juice

1 Can Tomato Soup

2 Tsp. Worcestershire Sauce

2 C cooked Quinoa

1 C Cheddar Cheese

So for our next recipe for our Cast Iron Skillet recipe series I came up with an AMAZING recipe. This recipe has become a favorite lunch for Samari and I. Full of flavor and protein. Here is how I made it.

I started with browning 1/2 pound of sausage and 1/2 pound of ground beef.

After the meat is browned, I add the chopped peppers, onion and garlic. Turn the heat to a medium high and allow the veggies to cook and get tender.

After the peppers are cooked (they will take the longest to finish cooking), add the diced tomatoes with the juice, Worcestershire sauce, and tomato soup. Heat everything through.

Now add the 2 cups quinoa to the skillet. Stir it in completely and allow the quinoa to absorb some of the juices from the tomatoes.

Top the skillet with the shredded cheddar cheese. Place the skillet in a 350 degree for about 5 minutes or until the cheese is melted and gooey!
