Peanut Butter Banana Muffins

Ingredient List

2 C Peanut Butter

4 RIPE Bananas

4 Eggs

1 Tsp. Baking Soda

2 Tsp. Apple Cider Vinegar

4 TB. Honey

1 TB Vanilla

12 oz. Chocolate Chips

These muffins turned into a favorite around here. The 24 muffins didn’t last 24 hours. The kids devoured them! They are full of protein from the peanut butter, and only contain natural sugars. Well, if you don’t count the chocolate chips. Here is how we made them.

First, we placed 4 ripe bananas into the food processor and gave them a quick blend. You can also use a blender.

Next I add the peanut butter and blend. Then add the Eggs, Baking Soda, Honey, Apple Cider Vinegar, and Vanilla and blend everything up.

Now I transfer everything into a regular mixing bowl. I add all the chocolate chips except for 1/4 cup of chips. Mix the chips into the banana mixture.

Look! I have a helper in the kitchen! That doesn’t happen very often.

Next line 24 muffin holes with wrappers or you can grease the holes in the muffin tin. I use an ice cream scoop to fill the muffin tin and then take the left over chips and dribble some on top of the batter. Bake the muffins at 400 degrees for 8-12 minutes or until the muffins are cooked all the way.

I hope your home has these muffins disappearing as fast as our home did. They are tasty!
