1 Box of Cake Mix, your choice
2 Large Eggs
1/3 C Oil
These cookies are great for a crowd. They are fairly cheap to make and you can get a good variety so they please everyone. I usually wait until cake mixes go on sale and then stock up on them. I always get 5 or 6 different types of cake mixes because there are so many things you can make with them. Here is how I made these cookies.
First I picked out the cake mixes. I chose to make 3 different types of cookies.
I picked the lemon cake mix to make cookies out of first for this blog post. So the next thing you do is open the cake mix and combine the full mix with 2 eggs and 1/3 cup oil. Mix them until combined. The batter is really thick.
Now I bust out my trusty silicone baking mats and cookie scoop. 2 of my favorite baking helpers. The scoop makes for more uniform cookies and the silicone mat allows the cookies to cook evenly and not stick. If you don’t have a baking mat, you can use parchment paper. And the scoop can be replaced by 2 spoons.
Scoop the dough out onto the baking mat leaving about an inch between cookies.
Bake the cookies for about 8 minutes (or until golden toasted) in a 375 degree oven.
I had a little bit of Strawberry and Orange dough left over so I combined them to make a multi-flavored cookie. The sky is REALLY the limit with these cookies. This cookie is also great for Whoopie Pies as well. I would use a bigger scoop when making them and make a yummy cream filling. (I may have to do a round two blog post for those)
Using these flavors really makes for a light and fresh cookie to enjoy. You really get a bunch of cookies from this recipe. These cookies turn out with a nice, light crisp on the outside and the inside is airy and light. I hope you consider making these cookies the next time you have to supply something sweet to a crowd!
