Ingredient List
2 flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup light brown sugar, not packed
4 Tablespoons Macadamia Oil (or butter at room temperature)
2 large eggs
1 and 1/2 cups mashed very ripe banana (about 3 bananas)
1/3 cup sour cream or plain or vanilla yogurt
1 teaspoon vanilla extract
Cinnamon Filling
1/4 cup granulated sugar
1 teaspoon ground cinnamon
Simple Glaze
1/2 cup powdered sugar, sifted
1 Tablespoon milk
Let me first introduce you to this little gem that we found while shopping at bizarre stores. We actually found this at a health food store that primarily sells protein drinks. I have had been in possession of this oil for about 2 months trying to think how I wanted to put it to good use. I decided to boost the flavor of the banana bread and use this instead of butter. This recipe was developed with THIS INGREDIENT IN MIND. But never fear- if you don’t have this oil, butter works perfect for this recipe as well. Let me tell you how I made this Banana Bread with a Cinnamon Filling.
I first mixed the dry ingredients together and set them aside. The dry ingredients are 2 cups flour, 3/4 teaspoon baking soda, 1/2 teaspoon salt, and 1 teaspoon cinnamon.
Now, in a stand mixer, combine your wet ingredients of the batter. 1/2 cup brown sugar (not packed tight), 4 tablespoons oil, 2 large eggs (I used 3 small eggs because that is what the chickens gave us today), 1 1/2 cups mushed banana, 1/3 cup sour cream and 1 teaspoon vanilla. I mix everything up in the mixer just until combined. Add the dry ingredients into the wet and mix until it is combined, do not over mix.
Now mix 1 teaspoon of cinnamon and 1/4 cup sugar and set aside for the cinnamon filling.
Now put 1/2 of the batter into a lightly greased loaf pan.
Now place all of the cinnamon filling on top of the first layer of batter. And now pour the second half of batter on top of the cinnamon sugar mixture. Place in a 350 degree oven and bake for 45-55 minutes or until it is baked all the way through.
When it comes out of the oven, take a knife and run it along the sides of the pan to loosen the sides. Now take your glaze and drizzle some on top. I don’t use all the glaze that way we have glaze to put on individual pieces as we serve the bread up.
This is a perfect recipe for a cold winter morning and it is also a great way to use up those brown mushie bananas!
Banana Bread with Cinnamon Filling
Ingredients:
Banana Bread
2 flour

Directions:
- Preheat oven to 350F. Spray a 9×5-inch loaf pan with cooking spray. Set aside.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside. In a separate large bowl, beat the brown sugar and oil (or butter) with a stand or handheld mixer on medium speed until well blended – about 1 minute. Add the eggs one at a time, beating well after each addition. With a wooden spoon, stir in the mashed banana, yogurt, and vanilla. Slowly add in the dry ingredients. Do NOT overmix. Batter will be thick.
- Spoon half of the batter into prepared loaf pan. Sprinkle with cinnamon-sugar filling ingredients. Top with remaining batter. Bake for 40-45 minutes or until a wooden pick inserted in center comes out clean.
- While the bread is cooling, make the glaze in a small bowl by combining the powdered sugar and heavy cream. Add more powdered sugar until you reached desired thickness. Drizzle over banana bread
