1 1/2 pounds of London Broil, sliced thin across the grain
Tortilla Shells
Cheddar Cheese
Fire Roasted Peppers
Onion
Fajita Seasoning
Re-fried Beans
Fajitas are so easy to throw together and they can bring a nice spice to your dinner table. These are a family favorite around here. The great thing about them is you can add as many veggies as your family likes. It is so easy to adjust this recipe for your own personal taste. Here is how I make them.
First, lets start with the Fajita seasoning. You can buy this if you would prefer. But I enjoy making this from scratch. It is easier to control what is in the spice blend and how spicy you want the mix. Simply mix the following in a bowl. 1 Tablespoon Cornstarch, 2 Teaspoons Chili Powder, 3/4 Teaspoon Salt, 1 Teaspoon Paprika, 1 Teaspoon Onion Powder, 1 Teaspoon Garlic Powder, 1/4 Teaspoon Red Pepper Flakes (or if you like more PEP, you can use Cayenne Pepper), and 1 Teaspoon Cumin.
It is time to work on the meat. I use my hot skillet and cook the London Broil in 2 tablespoon of olive oil. You want to cook it MOSTLY through.
Once it is cooked, mostly, place the juice and the meat on a plate.
Now place 1 tablespoon of butter in the skillet.
Take your chopped onion and your fire roasted peppers and saute them. Cook them on low to medium heat until the onions are tender.
Now that the onions and peppers are tender, place the meat and the juices back into the skillet. Put 2 tablespoons of the fajita seasoning into the skillet and 1/3 cup of water. Finish cooking the meat and seasoning the mix. It should only take about 3 minutes longer.
After the meat has finished cooking, it is time to assemble the fajitas.
First, toast up the tortilla shell.
Next you will take your re-fried beans and smooth a layer on the tortilla shell.
After the beans are on the tortilla shell, add cheese, meat and sour cream. Roll up the shell and enjoy!
