Coconut Rice Pudding

Ingredient List

1/4 C Dried Cranberries

1/2 C Dried Coconut

2 C Milk plus 1/2 Cup

1/3 C Sugar

1/2 tsp Salt

2 eggs

1 tsp. Vanilla

1/2 tsp. Cinnamon

I had some left over rice from dinner that I didn’t want to waste. So when you have left over rice, you make one of two things. Fried Rice or Rice Pudding. I chose to make rice pudding. But I didn’t want just plan ol’ rice pudding. So I bumped it up a notch! Here is how I made it.

I placed 1/4 cup dried cranberries, 1/2 cup dried coconut, 2 cups cooked rice, 2 cups milk, and 1/3 cup sugar and started cooking it on the stove. You bring this mixture to a boil and then reduce to simmer for 15-20 minutes.

After the rice mixture has cooked for 20 minutes, place the 1/2 milk, beaten eggs, and cinnamon in the mixture. Mix continuously and cook for another 3 minutes. Remove from heat and add the vanilla.

After the pudding cools, dish it up and enjoy!
