Ingredient List
1/2 cup Butter
3/4 cup Eggnog
2 cups Sugar
12 oz White Chocolate Chips
7 oz Marshmallow Creme
1/2 tsp Nutmeg plus more for sprinkling
2 tsp Vanilla
So let me be honest. Today’s fudge wasn’t going to be Eggnog. It was supposed to be Peanut Butter Fudge. Well after doing all the work and using all the ingredients, it ended up being a catastrophe. The fudge never turned out right. I am sure it tasted fine but it never did turn into “Fudge” so, it was back to the drawing board. See, even I make mistakes and have flops. So I guess you could say, my loss was your gain.
The taste testers in my home really enjoyed the eggnog fudge. I think they would have enjoyed it more if they were big eggnog fans. For most of the taste testers, it was the first time ever tasting eggnog. I guess it would be fair to say, If you love eggnog, you will REALLY enjoy this fudge!
Here is how I made the fudge
The first step is to place 1/2 cup of butter, 3/4 cup of eggnog, and 2 cups of sugar in a heavy bottom sauce pan and start cooking it on low heat. You want to go low and slow with this so you do not burn the sugars.
You want to cook this mixture until it reaches about 240 degrees on your candy thermometer. Remember to stir regularly.
Once your mixture reaches the appropriate temperature, add 12 oz of white chocolate chips and 1/2 teaspoon of nutmeg. Mix constantly until the chocolate is completely melted.
Now add 7 oz of marshmallow fluff and 2 teaspoons of vanilla to the chocolate mixture and stir until well combined.
Pour the fudge into a foil lined pan that has been greased lightly with butter. Then sprinkle with a pinch or two of nutmeg on top. Place in the fridge until it is fully set.
Cut into desired pieces and enjoy!
