Ingredient List
1/2 C Butter
1/2 C Coconut Oil
3 1/3 C Flour
1 Tsp Baking Powder
2 Tsp Baking Soda
1/2 Tsp Salt
3 Tsp Pumpkin Pie Spice
1 1/3 C White Sugar
1 1/3 C Coconut Sugar
1 Tsp Vanilla
4 Eggs
2 C Pumpkin Puree
2 C Mini Chocolate Chips
This morning Stoney came to me and asked for muffins for breakfast. So we sat down and looked up some recipes and decided to come up with a new recipe. It is a hobby that I enjoy, come up with new recipes, that is. Stoney and I decided on a Pumpkin Muffin with Chocolate Chips. Here is what we came up with.
We started off with 1/2 cup of butter and 1/2 cup of coconut oil. I placed it in a sauce pan to bring the butter and oil to room temperature.
Next we combined the dry ingredients. 3 1/3 Cups Flour, 1 Teaspoon Baking Powder, 2 Teaspoons Baking Soda, ½ Teaspoon Salt, 3 Teaspoon Pumpkin Pie Spice.
Now mix the wet ingredients. ½ Cup Softened Butter, ½ Cup Coconut Oil, 1 1/3 Cup White Sugar, 1 1/3 Cup Coconut Sugar, 1 Teaspoon Vanilla, 4 Large Eggs.
Now it is time to add the 2 cups of pumpkin puree to the wet ingredients.
The next step is to mix your wet ingredients with your dry ingredients. Then add 2 cups of Mini Chocolate Chips to the batter.
Next line the cupcake pan with wrappers or grease the muffin tin. Place in a 350 degree oven and bake for 18-20 minutes or until a tooth pick comes out clean.
These were so amazing! Preston devoured 3 in no time at all. I hope you enjoy them as much as we did this morning!
