Ingredient List
1 cup coconut sugar
1 cup brown sugar
1 cup butter
2 cups of pumpkin
4 eggs
3 teaspoon cinnamon
1 teaspoon ginger
1/2 teaspoon nutmeg
1/2 teaspoon cloves
2 teaspoon baking powder
2 teaspoon salt
3 cups of flour
It’s that time of year again. FALL! I love watching the leaves change their color and the cool crisp mornings. A great cup of coffee with a nice fluffy piece of Pumpkin Bread to go along with it. I could eat pumpkin and pumpkin flavored things all year ’round, but I try to keep it just for fall. This pumpkin bread is one of the many pumpkin type things I enjoy making and eating. It is easy and full of flavor! Not to mention the amazing smell that fills your home while it is baking.
In my stand mixer I combine 1 cup of coconut sugar, 1 cup brown sugar, 4 eggs, and 1 cup of butter.
I then mix in the 2 cups of pumpkin puree.
As the wet ingredients are being combined, I then incorporate the dry ingredients. Mix together 3 teaspoons of cinnamon, 1 teaspoon of ground ginger, 1/2 teaspoon of nutmeg, 1/2 teaspoon on cloves, 2 teaspoons of baking powder, 2 teaspoon of salt and 3 cups of flour.
Then combine the wet ingredients with the dry ingredients.
Lightly grease 2 loaf pans and place in a 350 degree oven and bake for about 40-50 minutes. When a toothpick is pulled out clean from the center of the bread, you will know the bread is cooked all the way through.
Allow to cool slightly in the loaf pan and then remove the bread to cool on a wire rack the rest of the way.
