There is nothing like a bowl of my Mama’s Banana Pudding to enjoy on a nice summer evening. After working on the homestead all day, it is a great way of sitting back and enjoying the evening after a long days work. I found this recipe among my recipes I received from my Mom. I hope you enjoy this family favorite as much as we do!
The first step is taking 2/3 Cup of sugar, 1/2 Teaspoon salt, 2 1/2 Tablespoons of Cornstarch, 1 Tablespoon of Flour and 3 Cups of Milk and placing it in a heavy bottom sauce pan and bring to a boil, constantly stirring. Boil for 3 minutes.
You want to have your 3 egg yolks separated and 1 Tablespoon of butter and 1 1/2 Tablespoons of vanilla prepared. I used vanilla that I infused in Bourbon for a richer taste.
After the milk mixture has boiled for 3 minutes, temper your eggs and then stirring constantly add the tempered eggs into the milk mixture and bring to a boil for 1 more minute.
To test the thickness of the pudding, take the back of a spoon and coat the pudding on it. Then take your finger and swipe the center of the spoon and make sure the swipe stays clean and there is no running of the pudding. This is a pretty easy test to make sure the pudding is at the right thickness. Once you are to this stage, remove from heat and stir in the vanilla and butter until the ingredients are well incorporated. Cool the pudding before assembling the rest of the dessert.
After the pudding has cooled, take your vanilla cookies and place them in a single layer on the bottom of the dish.
Then cover the cookies with a layer of the vanilla pudding and place the chunks of banana on top of that. Repeat these steps until you end up with a layer of cookies on top.
After your dessert is assembled, I cover with plastic wrap and keep chilled in the fridge until it’s time to enjoy.
Vanilla Pudding
2/3 Cups Sugar
½ Teaspoon Salt
2 ½ Tablespoons Cornstarch
1 Tablespoon Flour
3 Cups Milk
3 Egg Yolks
1 Tablespoon Butter
1 ½ Tablespoons Vanilla
-In a heavy bottom sauce pan combine the sugar, salt, cornstarch, flour, and milk. Bring to a boil, stirring constantly for 3 minutes.
-Temper the eggs and add to the mixture and boil for 1 more minute.
-Remove from heat and add butter and the vanilla and stir until well incorporated. Cool.
