Drunken Fig Jam

Fig are one of the oldest fruits recognized by man. They are known for their sweet and delicious flavor and have been used as a natural sweetener for years.

I recently came upon about 2 pounds of Mission Figs, so I decided to make a Drunken Fig Jam with them. It was very easy and turned out full of flavor.

First you take 2 pounds of Figs and cut them into quarters.

Then add 1 1/2 Cups Sugar

and 1/2 C Brandy

and finally, 1/4 Cup of Lemon Concentrate. (fresh lemon juice doesn’t have the same PH levels and can mess with the canning process)

Mix it all together and cover. Place in the fridge for 8 hours or over night.

After the 8 hours, simmer on the stove top for 45 mins.  Add 1 Teaspoon Cinnamon and 2 Teaspoons Vanilla.

The next step is to puree the fruit. I use an emulsion blender, but you can use a blender or food processor. WARNING-BE CAREFUL WHEN BLENDING HOT FOOD!!! It will splash and explode out of the blender or food processor. It is best to let it cool a bit before blending and then reheat to a simmer.

The next step is to place the jam into sterilized 8 ounce jars leaving a 1/4 head space and removing all the air bubbles. Wipe the rim clean and run your finger around the lip to make sure there aren’t any hidden particles.

Put the sterilized lids and rings on the jars and place in a water bath. Cover the jars with at least 1 inch of water. Cover and bring the water to a boil and boil for 15 minutes.

When the 15 minutes is up, remove the jars and place on a dry towel spaced apart and listen to the lids make that wonderful noise. PING PING!!! Music to my ears.  After they have sat for 12 hours UNDISTURBED, remove the rings and label them.
