Instructions
  1. Mix together the coconut flour, almond flour, beef gelatin, baking powder, and baking soda.
  2. In a separate bowl, mix together the sugars, eggs, and vanilla.
  3. Mix the dry ingredients into the wet ingredients.
  4. Add the melted butter to the dough. Allow the dough to rest for 5 minutes.
  5. Stir in the chocolate chips and place the dough in the refrigerator for 30 minutes.
  6. Preheat oven to 345 degrees.
  7. Place the cookie dough on a silicon lined or parchment lined baking sheet. Bake for 15 minutes or until starting to brown.
  8. Allow the cookies to cool on the baking sheet for about 5 minutes.
  9. Remove the cookies from the baking sheet and cool on wax paper or cooling rack.
  10. Enjoy!
