Keto Thumb-Print Cookies
  1. Cream the butter, cream cheese, and sugar together. Then add the egg and almond flavoring and mix well.
  2. In a separate bowl, mix together the coconut flour, baking powder and salt. Add the dry ingredients into the wet ingredients, and mix well.
  3. Line a baking sheet either with parchment paper or a silicon mat. Using about 1 tablespoon of dough, form balls.
  4. Then use your thumb or a spoon make a well in the center of the cookie. Take the sugar free jam and place a small amount in the thumb-print of the cookie. Place the prepared cookies into the refrigerator for about 1-2 hours.
  5. After the cookies have firmed up in the refrigerator, bake in a 350 degree oven for 15-18 minutes. Allow the cookies to cool on the baking sheet.
