Faux “Potato Salad”
A great side dish for any meal, especially a pot luck or BBQ! This is the recipe I came up with. It is more of an Overloaded Faux Potato Salad. It has the texture of a traditional potato salad but the flavors of a baked potato with everything on it!

  1. First you want to cut the head of the cauliflower into small, bite sizes pieces. Steam for about 4-6 minutes or until fork tender. Be careful not to over steam the cauliflower. You just want them fork tender! The longer you cook the cauliflower the more cauliflower taste it has. You also don’t want to over cook it because it wont hold it’s shape if the cauliflower is over cooked.
  2. After the cauliflower is cooked, drain it in the sink and then let it dry and cool the rest of the way on paper towels. This helps remove any extra water that is hiding in the cauliflower.
  3. Next, mix the rest of the ingredients together in a bowl. I like to mix this while the cauliflower is cooling so the flavors can get well antiquated! After the cauliflower is completely cooled and dry, fold the cauliflower into the rest of the mixed ingredients. Salt and pepper to taste and add place in the refrigerator until you are ready to enjoy!
